Basic pan-fried chicken thigh: Use one teaspoon of Cajun Spice Blend to marinate 100g of chicken thigh with some olive oil for 30 min. Pan fry the chicken.

紐奧良巫毒辣媽秘製香料,以紐奧良最著名的肯瓊料理 (cajun) 與克里奧料理 (creole) 皆有的,俗稱紐奧良料理三位一體的洋蔥、芹菜、青/紅椒為發想,佐以香噴辣的卡宴辣椒,與為肉類提鮮的羅勒、奧勒岡等,再以香蒜畫龍點睛。撒上雞翅入烤箱,就是一道簡便完美的紐奧良風味烤雞。
位於密西西比河入墨西哥灣,遍佈沼澤的淡水與海水交界之處,紐奧良除了台灣人較知道的烤雞外,其實更為聞名的是其豐富的魚產海鮮貝類料理。
所以此秘製香料,除了可以供做煎/烤雞翅/雞排的醃料/佐料之外,也能拿來烹煮紐奧良聞名的肯瓊或是克里奧海鮮料理。其融合了法國/西班牙料理手法,與非洲移民從家鄉帶來的特色風味,絕對能滿足愛品嚐世界美食的味蕾。
*為了在醃肉品時產生蛋白質重組效應,且使肉質表面有口感且內部更柔嫩多汁,此料理香料已加入適量海鹽。 口味較清淡者,建議料理時無須再加鹽,口味較重者則可適量自行調味。

1. Prepare the meat steak. (About 100g)
2. Sprinkle one teaspoon of shise spice mix on the steak.
3. Rub the steak with some olive oil to ensure the spice mix is evenly distributed.
4. Pan-fry the steak and you are done.

All seasonings are pre-salted and easy to use even in an outdoor situation.
